Sweet and Southern Chicken Tenders

So, I'm a huge fan of chicken... we bake it, grill it, crock it, and yes, fry it.. I do live in the south you know!  Well, last weekend I was making Chicken Tenders, I usually roll them in flour, egg, cracker crumbs, and then to the sizzling hot oil!  YUMM... Unfortunatly I started this process without taking a good inventory of ingredients and about half way through the chicken, I ran out of cracker crumbs... Oh the horror!!

Yeah right, all that meant to me was that I had a great excuse to get a little creative.  So after a little searching and digging in the pantry I found chili cheese fritos and frosted flakes (they are practically corn flakes you know!)  And just like that Sweet and Southern Chicken Tenders were created!


Sweet and Southern Chicken Tenders

  • 2 lbs Chicken Tenders
  • 1/8 c. Flour
  • 4 eggs
  • 3 cups Frosted Corn Flakes (crushed)
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • Vegatable Oil
  1. Place tenders, flour, salt, and pepper in a large zipper bag, and shake throughly until tenders are well covered.
  2. Beat eggs in a shallow bowl
  3. Place Corn Flakes in a shallow bowl
  4. Pour enough oil into the 12-inch skillet to come to a quarter of an inch up the sides of the pan. Allow the oil to heat over a medium-high heat until the oil comes up to frying temperature.
  5. Dip floured tenders into egg until well coated and then roll in cereal.
  6. Place into hot oil and cook until golden brown, turning once.
Serve with honey, bbq, or any of your favorite dips.

Thankful for Menu Plan Monday

I hope you all had a wonderful Thanksgiving! We traveled to Houston, and had a wonderful time catching up with family! As I look around me daily, I am overwhelmed with the blessings in my life. Family, Friends, Faith... and also for you guys. I am so thankful to all my blog friends. I look forward to your visits and comments everyday and look forward to getting to know you more and more! I missed you all last week, but we all need breaks right?  
I am also thankful for Menu Plan Monday!! I have to admit, although I don't always stick with my menu, I would be lost without it! Meals seem to be an after thought in our home, we get so busy and before I realize dinner time is upon us, and I have three hungry boys at my feet. Luckily at that point all I have to do is check my menu and start cooking, instead of digging through my pantry hoping something is there that might make a decent meal. It is a must for me to stay organized and Menu Planning is such a large part of that.

So here is my menu plan for this week. Many of the dishes will use MORE Thanksgiving leftovers!

Menu Plan Monday

Monday:
Grandma's Spaghetti and Meat (recipe below), Cornbread, Salad

Tuesday:
Turkey Pocket Pies (recipe tomorrow)

Wednesday: 1st Wed. at BAF
Black Bean Quessadillas strips, fruit salad

Thursday:

Friday: Family Movie Night
Pizza, popcorn, Peppermint Sundaes

Saturday: Christmas Shopping
Crock pot Turkey Soup, cheese, crackers

Sunday:
Hash brown Ham Bake, green beans, salad


Recipe:

Grandma's Spaghetti and Meat (exactly as she wrote it on a recipe card for me)

1 1/2 c. Small Elbow Macaroni
1/2 lb Hamburger meat
1/2 tsp. Salt
1 tsp Sugar
1 46oz can of tomato juice

Cook Macaroni in enough water to be loose. While it's cooking brown meat loose or in small balls. Drain off water on macaroni and add tomato juice, meat, salt & sugar. Heat to a boil. Very good with Cornbread or butter and crackers.

Menu Plan Monday.

Do you even know how excited I am?  Do you know what this week is?  Well as of Wednesday, it will officially be FALL!!!!! I love Autumn... and lucky for me, here in South Texas we pretty much skip over winter for an extra long autumn season, and also we have been so blessed with a nice bout of rain this week, and the tempurature is actually nice and cooling down! So it actually feels like fall outside this week. :) Well, we are a little ahead on our lessons, so we are taking a day off from formal school on Wednesday to make a few decorations, decorate the house, and do some special baking/cooking projects. I love homeschooling!
 So of course to follow the new season, we have a great yummy savory menu this week. Enjoy, Hope it spurs on some ideas for you.

Monday:
Honey glazed Grilled Chicken, Baked Sweet Potatoes, Snow Peas
Tuesday:
Rachel's Shredded Crockpot Chicken tacos, beans
Wednesday: First day of FALL!! Awanas

*Notice I said Fresh baked and not Homemade Lets not get too crazy here... I'll buy the frozen dough and let it rise :)

Sorry there is not a plan for every meal, they all run together and I seem to very rarely follow what I plan for breakfast and lunch, so I only put special or specific meals that I have planned for the week. Breakfast will for that likely consist of yoguart, cereal, or toast... and lunch will be sandwiches and leftovers. Easy enough, huh?  Hope you all have a wonderful day of meal plannin and cooking this wonderful week of fall! :)

Butternut Squash Bisque!!!

So if I haven't mentioned it before... FALL is my FAVORITE SEASON!!! I mean, like I really love it!! How could you not, all good things happen in fall, for example; Thanksgiving, cool weather, pumpkins, my birthday (Oct 7th in case you where wondering), the day I married the man of my dreams, beautiful landscapes, I love to look at God's extraordinary creation in the fall ... and fantastic fresh fall produce. One of my newly discovered favorites is Butternut Squash!  I followed a recipe for butternut squash soup(Better Homes and Gardens) last year, but have found several others and since tweaked  them all to come up with this one! Our family loves it, so of course it will be our dinner on the first day of fall! Hooray!!

Butternut Squash Bisque

3 lbs of Butternut squash (peeled, seeded, and cubed)
1 medium onion, chopped
1/4 c. butter
2 large carrots, coarsely chopped
1 stalk of celery, coarsely chopped
2 granny smith apples, peeled, cored, and chopped
2 cloves of garlic, chopped
1/2 tsp. ground ginger
1 48oz box low sodium chicken broth
1 c. apple juice
3 canned chipotle peppers in adobe sauce, chopped
1/2 c. sour cream

On a large dutch oven, melt butter. Add squash, carrots, celery, and garlic; stirring frequently until tender.
Add apples, broth, juice, ginger, and peppers. Bring to a boil, reduce heat, cover and simmer for 20 minutes.  Puree in batches in a blender; return to dutch oven. Whisk in sour cream until well blended. Heat thoroughly. Remove from heat and serve. Top with Smoked Gouda (a must), and bacon crumbles.

Grilled Chicken Tacos

I love casseroles, I love spending hours in the kitchen at least when it is cold I mean cool (it doesn't get cold here in South Texas) But that is not the case when it is hot out!  In that case it is a Grill ONLY evening. Keep the heat outside where it belongs and is not interfering with my lovely air conditioning.  So, here is one of our faves.  TACOS!! I mean who doesn't love a soft warm tortilla stuffed with all things fresh and savory?

So here it is...

Grilled Chicken Tacos

4 boneless skinless chicken breast
1 pkg taco seasoning(dry)
1/4c olive oil
3/4c low sodium chicken stock
10 flour tortillas
2 c. lettuce shredded
1 tomato  diced
1 can sliced black olives
fave. taco sauce. (We love Taco Bell's!!)

Place chicken, taco seasoning, olive oil, and stock in a gallon size storage bag, shake to coat chicken well and marinate at least 1 hour.  Grill on medium heat 10 minutes each side or until chicken is cooked throughout. (Hint: For busy days keep marinated chicken stored in the freezer so all you have to do is thaw the day before, it marinates longer and all you have to do is hand it to your husband the next evening as he is walking to the grill.)

Slice Chicken into long strips, place 2-3 strips in a warm tortilla, top with your favorite taco goodness. Serve along side black beans and rice.  (PS. if you get the right kind you can microwave it)  Makes for one warm meal in one cool house! :)

Grandma's Spaghetti and Meat


Well a few posts ago I shared a special recipe. Grandma's Spaghetti and Meat, and a few of you asked for pics. Well, here they are. I have to say... I made it early in the day, because we had a busy evening, and I wanted to be able to just heat up dinner. So around 4:00, dinner was ready, cornbread was warm and I just couldn't help myself... I ate!! An entire serving!! and then ate again at dinner time... I just couldn't help it:) Ok, I could help it, but I didn't want to.

1 1/2 c. Small Elbow Macaroni
1/2 lb Hamburger meat
1/2 tsp. Salt
1 tsp Sugar
1 46oz can of tomato juice

Cook Macaroni in enough water to be loose. While it's cooking brown meat loose or in small balls. Drain off water on macaroni and add tomato juice, meat, salt & sugar. Heat to a boil. Very good with Cornbread or butter and crackers.

Texas Enchilladas

Texas Enchiladas are a super simple, down home, savory southwest treat, that is always a hit in our house. The origins, Who knows, it's one of those so and so's cousin's cousin, twice removed, 2nd wife's, grandmothers, brother.... kinda recipes. All I know is that this is one of those dishes from Michael's childhood that is comfort to his heart. This is what he chose for his birthday dinner.


Texas Enchiladas:

20-25 tortillas Corn or Flour
2 cans Chili
2 Cups Shredded Cheddar Cheese

Step one: Minimal Ingredients.
Place 1/8c. of chili down middle of Tortilla, sprinkle with shredded cheese
(if you are using corn tortillas, make sure to soften then in a little warm oil to prevent cracking)
Place in a greased 9x13, seam side down
(you will regret it if you forget to spray the pan, it will take you more time to clean the pan than it did to make the enchiladas)


Pour any remaining chili down the middle and sprinkle top with remaining cheese.



Bake at 350 degrees for 20-25 minutes.. Chili will be bubbly and Cheese will be melted.

Top with sour cream, guacamole, or your favorite salsa.
Yep, that's it... hey I never claimed to be a gourmet cook. I know I could add some fresh ingredients, spend a little more time, adding this and that. But it is YUMMY just the way it is!!!

A little of this, a pinch of that, and topped with an extra helping of Memories.

Not long ago my cousin and I were chatting and she mentioned Grandma's Spaghetti and meat meat. Oh my, just the mention of that made me smile and made my mouth water! Every summer my cousins would come in a stay at my grandparents house for a week or so and we lived next door, which meant I stayed at grandmas house too. And every summer Grandma would make her wonderful, delicious, spaghetti!!! I have thought about that so many times but would have never attempted to make her spaghetti myself; I knew it would be too much preparation, all day in the kitchen, and I could never taste like Grandma's. She had magical pots and pans. But for whatever the reason, that conversation inspired me to make GRANDMA'S MAGICAL SPAGHETTI AND MEAT. The next morning I called her up, and with a slight bit of hesitancy asked her for the recipe. She giggled at me and rattled of 5 ingredients. 5 INGREDIENTS. Of course, I rushed to the grocery store and made it that very night. And low and behold it did taste like Grandma's!! My husband loves it, my kids love it, but I think I love it more. Nothing can top summers at Grandma's kitchen table with two of my sweetest cousins and our grandparents, laughing at our mud pies and fun in the pool; and eating Spaghetti and meat with cornbread on the side. Or Cornbread with spaghetti and meat on top if you are my Grandad!
I'm sure you will read this recipe and maybe even try it, but I know you will never appreciate this meal as I do. It is comfort to my soul! Thank you Grandma for making my childhood and my boys childhood so special!

Bakin' my Bacon

We love bacon!! I don't even care that it isn't healthy for me... I think you can add bacon to almost any dish and make it better! But I'm sure we can all agree the worst thing about bacon is the greasy mess you have all over you kitchen when you fry it. Well, it doesn't have to be that way... Many of you have probably already been doing this, but my new favorite way to cook bacon is in the oven! That's right, just Bake your Bacon!

A 400 degree oven(no preheat necessary), foil lined baking sheet, and 20minutes... makes for a perfect slice of bacon. Without any splattering, grease burns, or standing over the stove... How can you not love it!


Tips: You can overlap the bacon slightly when laying it out. When the edges of bacon are a deep golden brown your bacon is done. Approximately 20min. but as you experiment with it you can adjust the time to your bacon preferences. Before you bake your bacon you can also sprinkle brown sugar over the top for extra yummy sweetness, or dredge in flour or cornmeal for a crispy battered taste.

Great Summer Recipe

We love this recipe... it is delicious, simple, and very pretty. Great for cookouts, picnics, and summer celebrations.

Summer Fruit Salad

You judge how much of each you want depending on the size of your salad. Sorry about the lack of measurements, but you can judge all to taste.

Watermelon (chunks)
Raspberries
Blackberries
Blueberries
Strawberries (quartered)
Fresh Pineapple (chunks)

Place in a large bowl.
Finely chop about 7 mint leaves and place to side.
Make a simple syrup (1 part water 1/2 cup , 2 parts sugar, 1 cup) Bring to a boil, toss in mint leaves and boil for one minute. Careful not to burn syrup, stir constantly.

remove from heat and allow to cool slightly. Pour over fruit to taste. (store any leftover syrup for quick salads or snacks) Toss and serve or chill until serving time. :)

Enjoy a fresh fruity treat!

Penne con Pico de Gallo

1 pkg. Whole Wheat Pasta

12 oz. Pico de Gallo

1 can Black Beans (drained and rinsed)

1 can Whole Kernel Corn(drained and rinsed)

juice of 2 limes

1 c shredded asiago or Parmesan cheese

1 c creamy cilantro dressing

Prepare Pasta according to directions (drain rinse & set aside).

Combine beans, corn, pico, lime juice, cheese, & dressing in a large bowl.

Toss with Pasta, season with salt and pepper to taste. Cover and chill for 15 minutes.

Earth Bread ( maybe not the healthiest but it is really tasty)

Heat Oven to 350 degrees and grease and flour 2 med. Loaf Pans.

Mix together and set aside:
3 Eggs
1 t. Vanilla
2 C. Sugar
1 C. veg. Oil

Mix Dry Ingredients:
2 C. Whole Wheat Flour
1 C All Purpose Flour
1 t. Baking Soda
1 t. Salt
1/2 t. Baking Powder
1/4 t. Cinnamon

Mix dry ingredients to Egg mixture and add
1 C grated Carrots
1 C Grated Zuchinni
1/2 c. smashed banana
1 C. Chopped Pecan (optional)

Mixture will be very thick. Pour into Pans and Bake for 50- 60 Minutes.

Recipe Corrections

OOPS. So I guess when I post recipes I should double check them to make sure they are correct. Well, I will from now on, but here are the correction(in red). Hope you all enjoy.

Omelets in a Bag:
You will need a heavy Duty Ziploc for every member.
Write name on bag with a permanent marker.
Bring a pot of water to a rolling boil.
Lay out a variety of omelet fillings ham, cheese, bacon, bell pepper, mushrooms, onions, black olives, tomato, etc.
Allow each person to pick and choose their favorite fillings and place in bag, then crack two eggs into the bag PRESS OUT THE EXTRA AIR and shake.
Place Bags in pot. Cook for 13-15 minutes.
You can put about 6 omelets into a large pot, for more you can make another pot of water.
Remove bags and dump contents onto plate.

Serve with Hashbrowns, fresh fruit, or sweet breads.


Strawberry, Peach Slushies
2 c. froz. Strawberries
1 c. froz. Peaches
1 c. Water
1c. raw baby spinach
HONEY TO TASTE

Blend until slushy... I also added some raw yellow squash to mine and the kids drank them just the same.
