We have all had the "Crud" around here for the last couple of weeks, and it ended up getting little Brennan. He had a little bit of a snotty nose when he woke up Saturday morning, but by 3:00 that afternoon, he was having a really hard time breathing. We called the Doc. who of course said, take him to the clinic. Luckily our Ped. office has a Minor Emergency Clinic in town, so that is where we went. His Oxygen levels where low; so they did oxygen treatments, chest x-rays, nose swabs, and finally Nebulizer treatments. Poor Baby, was such a trooper through it all, but really hates the mask. We are continuing to do breathing treatments at home, and all test came back clear. Of Course being a blogging Mom, I got pics. PS. He isn't sleeping here, he is screaming.

Earth Bread ( maybe not the healthiest but it is really tasty)
Heat Oven to 350 degrees and grease and flour 2 med. Loaf Pans.
Mix together and set aside:
3 Eggs
1 t. Vanilla
2 C. Sugar
1 C. veg. Oil
Mix Dry Ingredients:
2 C. Whole Wheat Flour
1 C All Purpose Flour
1 t. Baking Soda
1 t. Salt
1/2 t. Baking Powder
1/4 t. Cinnamon
Mix dry ingredients to Egg mixture and add
1 C grated Carrots
1 C Grated Zuchinni
1/2 c. smashed banana
1 C. Chopped Pecan (optional)
Mixture will be very thick. Pour into Pans and Bake for 50- 60 Minutes.

Day at the Beach
I mentioned a while back that we were going to make a point to go to the Beach more this summer. So last weekend, we headed out to the Beach again. We had a great day, and all got a little crispy... except for Brennan.

Recipe Corrections
OOPS. So I guess when I post recipes I should double check them to make sure they are correct. Well, I will from now on, but here are the correction(in red). Hope you all enjoy.
Omelets in a Bag:
You will need a heavy Duty Ziploc for every member.
Write name on bag with a permanent marker.
Bring a pot of water to a rolling boil.
Lay out a variety of omelet fillings ham, cheese, bacon, bell pepper, mushrooms, onions, black olives, tomato, etc.
Allow each person to pick and choose their favorite fillings and place in bag, then crack two eggs into the bag PRESS OUT THE EXTRA AIR and shake.
Place Bags in pot. Cook for 13-15 minutes.
You can put about 6 omelets into a large pot, for more you can make another pot of water.
Remove bags and dump contents onto plate.
Serve with Hashbrowns, fresh fruit, or sweet breads.

2 c. froz. Strawberries
1 c. froz. Peaches
1 c. Water
1c. raw baby spinach
HONEY TO TASTE
Blend until slushy... I also added some raw yellow squash to mine and the kids drank them just the same.

Water, You goin down!
It was so pretty today, and I needed to water my grass, so we had a water day. The boys spent most of their time trying to take the water out. First it was the baseball bats. Cade ended up being the only casualty in that fight. The boys got a little too close and William swung and gave Cade a bit of a shiner. Then they broke out the swords. You would have thought it was a fire breathing dragon coming at them. I'm not really sure what vendetta they have against the sprinkler, but it better watch out for my little warriors. William loves to ham up for the camera. Brennan decided to get in on the action too. He was soaked. The water would hit him in his head and he would laugh and go back for more. When he finally got tired on the sprinkler, he decided to go exploring. We keep all of our outside toys in this trash can when we aren't playing with them and he decided to see what was inside. He played in there for 5 mins.
Did you come to Bible Class in a Truck?
Brennan has just started going to Cradle Roll class. And I just love to watch him. He and Cade are in the same class. They learn so much!! Here are their sweet little toes hanging down from the seats. Cade with red flipflops, Brennan with Flinstone feet. :) Here are the sweet boys with their Bible class friends. Happy Birthday Andrew.
My sweet Nephew, Andrew, turns next week. So this past weekend our family met in Austin to celebrate. Here are the boys waiting so patiently for Cake. Taylor, big brother, was so proud. :) The Weather was beautiful all weekend, so we mostly stayed outside. Brennan had a blast climbing in and out of the sand box. They boys were so Nasty by the end of the day.
I'm a Growing Boy!
Brennan has grown so much over the last couple of months. He crawls everywhere, pulls up on everything, and is now steadying himself with one hand. H also must be pretty smart, b/c he completely refused baby food. No matter how much I tried he was not going to let me put that spoon in his mouth. He loves to eat table food, but loves his bottle more. Here is our sweet pea trying out table food. Sweet Brennan. :) I love watching my boys sleep. Here is Sweet Brennan, all bundled up in his very favorite blanket. He has taken to it just as the other two took to theirs. He will suck his little thumb with one hand and rub his little blankie with the other. I know it is probably b/c he is my baby, but it melts my heart.

Menu Plan Monday... or Tuesday
Several of my blog pals do menu planning and post it on their blog. I am constantly going and checking for ideas and recipes, so I decided to do the same on mine. Menu planning is definitely a tool I use to stay within budget and make sure I have healthy meals for the family. Otherwise I end up over spending on groceries and buying much more convenience foods.
I warn you, for breakfast and lunch, I tend to make in bulk and we eat it for several days. So that is why there are so many repeats. I just cant seem to find the time to do it any other way. and when I do stuff goes bad.
Maybe someone can get some use out of it...
Monday:
B- Breakfast Roll ups
L-PB&J, Cheetos, raisins, apples
D-Veggie Quessadillas w/ LO Taco meat, black beans, corn
Tuesday:

Kinda Krunchy
Well recently I was told that on a scale of Mainstream Parenting to Granola Momma, that I was "Kinda Krunchy". (ok, it was the facebook quiz, but I do agree with it). Anyways, one of the recent krunchy things that our family is going to give a go is...... Bee Pollen. That is right, I know you are thinking, you are crazy, and what in the world do you do with bee pollen. But it has so many wonderful attributes. I linked several websites that have some information on Bee Pollen, so I'll let you know in a few weeks how it is going.

The visit was very interesting, and the Amish community looked much different than I expected, it was an educational trip to say the least. The variety or should I say Randomness of goods that we found at the shop was also very interesting. I ended up buying Fresh Honey, Homemade Bread, Bee Pollen, Fried Pies, and Zucchini, I also got a Roast... it is grass fed beef and I have never had natural beef before and have heard it has a very different flavor, so I'm anxious to make that later this week.
We are trying to start eating healthier, less processed, raw foods, whole foods. If you have any advice on where to shop or things to avoid, please let me know.
