Menu Plan Monday.

This week I'm including 1 1/2 weeks in my Menu. We are going out of town the last part of next week, and next Monday we will be spending as a family due to the Memorial Day holiday.




MENU PLAN MONDAY

Monday
B: Earth Bread (recipe below)
L: Peanut Butter & Jelly, Pretzels, fruit
D: Lg. Salad

Tuesday:
B: Fruit and Yoguat Parfait
L:Pimento and Cheese, Cheetos, veggie dippers
D:Meatloaf, Mashed Pot., Green Beans

Wednesday:
B:Earth Bread
L:Pimento and Cheese, Pretzels, Fruit
D:Quessadillas, Rice

Thursday:
B:Granola Bars
L:Meatloaf Sandwiches
D:Whole Wheat Fetticini, Salad

Friday:
B:Toast & Honey, fruit
L:Pimento & Cheese, Pretzels, veggie dippers
D:Pizza Movie Night (Pizza, Popcorn, Strawberry-Peach Slushies)

Saturday:
B: Cinnamon Toast, Egg Scrambles
L:MacNCheese, Peas, Fruit
D:Black Bean Burritos, Salad

Sunday:
B: Smoothies
L:Out
D:Leftovers.... clean out the fridge

Monday: (Memorial Day)
B: Yoguart & Granola
L: Out
D: Hotdogs, Chips, Fruit, Cupcakes (Picnic)

Tuesday:
B:Breakfast Rollups
L: LO Hotdogs
D:Sausage, Egg, Tacos, Fruit and Yoguart

Wednesday:
B:Granola & Milk
L: Leftovers
D: Cereal

Thursday:
B: Granola Bars
L:Peanut Butter & Jelly, Pretzels, fruit
D:Pizza Roll (in Car)

Friday - Sunday in Longview.


Earth Bread ( maybe not the healthiest but it is really tasty)

Heat Oven to 350 degrees and grease and flour 2 med. Loaf Pans.

Mix together and set aside:
3 Eggs
1 t. Vanilla
2 C. Sugar
1 C. veg. Oil

Mix Dry Ingredients:
2 C. Whole Wheat Flour
1 C All Purpose Flour
1 t. Baking Soda
1 t. Salt
1/2 t. Baking Powder
1/4 t. Cinnamon

Mix dry ingredients to Egg mixture and add
1 C grated Carrots
1 C Grated Zuchinni
1/2 c. smashed banana
1 C. Chopped Pecan (optional)

Mixture will be very thick. Pour into Pans and Bake for 50- 60 Minutes.
